Savory Grain Bowl:
Ingredients:
- 8 oz of cooked quinoa
- 4 oz of vegetable stock
- ¼ cup of chick peas (save the brine from the
can)
- ¼ cup of frozen or fresh broccoli florets
- ¼ of frozen edamame
- ¼ seasonal roasted veggies, (ie, squash,
zucchini, beets)
- 1 tsp vegetable or olive oil
- ½ cup of balsamic vinegar
Instructions:
- Reduce balsamic vinegar over medium high heat.
Simmer until reduced to a thick syrup consistency
- Mix quinoa with stock, drained chick peas. Cook
over medium heat to a simmer.
- Sauté broccoli, edamame, and seasonal veggies
over medium-high heat until veggies are tender. If using a seasonal squash or
beet, roast ahead of time so it is tender before sautéing.
- Top quinoa blend with sautéed vegetables.
Drizzle reduced balsamic glaze over the top.
