Savory Grain Bowl:

Ingredients:

• 8 oz of cooked quinoa
• 4 oz of vegetable stock
• ¼ cup of chick peas (save the brine from the can)
• ¼ cup of frozen or fresh broccoli florets
• ¼ of frozen edamame
• ¼ seasonal roasted veggies, (ie, squash, zucchini, beets)
• 1 tsp vegetable or olive oil
• ½ cup of balsamic vinegar

Instructions:

1. Reduce balsamic vinegar over medium high heat. Simmer until reduced to a thick syrup consistency
2. Mix quinoa with stock, drained chick peas. Cook over medium heat to a simmer.
3. Sauté broccoli, edamame, and seasonal veggies over medium-high heat until veggies are tender. If using a seasonal squash or beet, roast ahead of time so it is tender before sautéing.
4. Top quinoa blend with sautéed vegetables. Drizzle reduced balsamic glaze over the top.
